Watermelon Salad

Try this refreshing watermelon salad recipe. This vibrant, flavour-packed salad is perfect for warm summer days and pairs beautifully with a chilled glass of SpearHead Rose Pinot Noir. A natural match for the Rose’s bright acidity and flavour profile.

INGREDIENTS

  • 1 chilled seedless watermelon, cut into chunks
  • 1 English cucumber, quartered
  • 1 block feta cheese, cubed
  • Fresh dill, chopped
  • Fresh basil leaves, chopped

DRESSING

  • ¼ cup extra virgin olive oil
  • Juice of 2 limes
  • Drizzle of honey
  • Salt & pepper to taste

METHOD

  • In a large bowl, gently toss together the watermelon, cucumber, feta, dill, and basil.
  • In a separate bowl, whisk together the olive oil, lime juice, honey, salt, and pepper.
  • When ready to serve, pour the dressing over the salad and toss gently.
  • Serve immediately and enjoy!
