INGREDIENTS
- 1 chilled seedless watermelon, cut into chunks
- 1 English cucumber, quartered
- 1 block feta cheese, cubed
- Fresh dill, chopped
- Fresh basil leaves, chopped
DRESSING
- ¼ cup extra virgin olive oil
- Juice of 2 limes
- Drizzle of honey
- Salt & pepper to taste
METHOD
- In a large bowl, gently toss together the watermelon, cucumber, feta, dill, and basil.
- In a separate bowl, whisk together the olive oil, lime juice, honey, salt, and pepper.
