Winemaking
Our Dijon Clone 828 ripened beautifully in 2021 inspiring Winemaker Grant Stanley’s decision to produce a single vineyard, single clone Pinot Noir this year. The grapes were hand harvested, destemmed and cold soaked for six days before spontaneous fermentation. After 18 days on skins, the wine was pressed gently and transferred to French oak barrels (25% new) where it aged for 13 months.
Tasting Notes
This elegant and round wine is beautifully balanced with depth in flavour and silky tannins. The 2021 vintage is aromatic, with black fruits, cherry, and graphite undertones. The palate carries more dark fruit, with ripe dark cherry, black currant, and spicy notes of thyme.
Pair with duck confit, bruschetta, prosciutto.
