2021 Saddle Block Pinot Noir

100% pinot noir grapes sourced exclusively from our estate in Southeast Kelowna.
Winemaking
Grape clones Dijon 828, 115, 777, and 667 were hand harvested, 90% destemmed, and after 7 days of cold soaking, spontaneous fermentation commenced. Once the wine was dry the grape skins were pressed off and the wine was moved into French oak barrels for a period of 13 months with approximately 25% being new.
Tasting Notes
A full fragrant nose of cherry, raspberry, plum, and violet with delicate savoury notes peeking through. The palate is fresh and juicy with more dark seductive flavours of cherry, cinnamon, clove, and earth.
Pair with prosciutto tomato pizza, sushi, 70% dark chocolate
